Red Lobster-Style Cheddar Garlic Biscuits

Cold butter and a light hand keep these drop biscuits rough-edged and tender. Brush on the garlic butter after baking, where it stays fragrant instead of scorching, and never smooth the scoops because those crags are the good part.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp garlic powder
  • 1/2 tsp kosher salt
  • 6 tbsp cold unsalted butter cubed
  • 1 cup shredded sharp cheddar
  • 3/4 cup cold buttermilk
  • 2 tbsp melted unsalted butter
  • 1/2 tsp dried parsley

Method
 

  1. Heat the oven to 425°F and line a sheet pan with parchment.
  2. Whisk the flour, baking powder, garlic powder and salt, then cut in the cold butter until pea-size pieces remain.
  3. Fold in the cheddar and buttermilk just until no dry flour remains; do not knead the dough smooth.
  4. Drop 8 rough mounds onto the pan and bake for 14 to 16 minutes until their peaks are golden.
  5. Mix the melted butter with the parsley and brush it over the hot biscuits.
