Real Pumpkin Spice Latte

Pumpkin purée, brown sugar and spices simmer into the fifth scratch syrup, so the latte tastes like squash and warm spice rather than cinnamon alone. Straining keeps the concentrate pourable, while evaporated milk prevents pumpkin solids from settling too abruptly. The batch makes eight drinks and also works in cold brew.

Ingredients
  

  • 1 cup water
  • 3/4 cup packed brown sugar
  • 1/2 cup pumpkin purée
  • 1/2 cup evaporated milk
  • 2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 1 tsp vanilla extract
  • 16 shots espresso or 2 2/3 cups strong coffee
  • 6 cups milk

Method
 

  1. Whisk water, brown sugar, pumpkin, evaporated milk and spices in a saucepan.
  2. Simmer gently for 6 minutes, whisking often, then strain through a fine-mesh sieve.
  3. Stir in vanilla, cool and refrigerate the pumpkin spice syrup.
  4. For each latte, combine 3 tablespoons syrup with 2 espresso shots in a mug.
  5. Pour in 3/4 cup hot lightly frothed milk and serve promptly.
