Spread one side of every bread slice with the softened butter.
Turn four slices butter-side down and divide half the cheddar over them.
Add a thin layer of warm pork, a tablespoon of barbecue sauce, dry pickle slices and black pepper to each.
Top with the remaining cheddar and bread, keeping the buttered sides facing out.
Cook two sandwiches at a time in a covered skillet over medium-low heat until the bottoms are golden, 3 to 4 minutes.
Turn carefully and cook uncovered until the second sides brown and the cheese is melted, 3 minutes more.
Rest for 2 minutes before cutting so the filling stays between the slices.
