Pulled Pork Breakfast Biscuit Sandwiches

A tender biscuit, peppery pork and a folded egg turn leftovers into a proper diner breakfast. The pork is warmed with only a little broth, not another coat of sauce, so the sandwich does not slide apart. Cheddar melts directly onto the eggs before everything is stacked.

Ingredients
  

  • 6 refrigerated or frozen unbaked biscuits
  • 3 cups cooked pulled pork
  • 1/4 cup low-sodium chicken broth
  • 1/2 tsp coarse black pepper
  • 6 large eggs
  • 2 tbsp whole milk
  • 1/4 tsp kosher salt
  • 1 tbsp unsalted butter
  • 6 slices sharp cheddar cheese
  • 1/3 cup barbecue sauce

Method
 

  1. Bake the biscuits according to their package directions until deeply golden.
  2. Heat the pulled pork with the broth and black pepper in a covered skillet over medium-low heat until steaming, 6 to 8 minutes.
  3. Whisk the eggs, milk and salt until no streaks remain.
  4. Melt the butter in a large nonstick skillet and pour in the eggs.
  5. Cook over medium-low heat, folding broad sections toward the center, until just set.
  6. Divide the eggs into six portions, lay a cheddar slice over each and cover for 1 minute to melt.
  7. Split the biscuits and fill each with egg, warm pork and a restrained spoonful of barbecue sauce.
