Poppy Seed Chicken Cracker Casserole

Lemon and poppy seeds keep this old-school chicken filling from reading as plain canned soup. Crush the crackers coarsely so the top has texture instead of dust.

Ingredients
  

  • 4 cups chopped cooked chicken
  • 1 can 10.5 oz condensed cream of chicken soup
  • 1 cup sour cream
  • 1 tbsp fresh lemon juice
  • 1 tbsp poppy seeds
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 2 cups coarsely crushed buttery crackers
  • 5 tbsp unsalted butter melted

Method
 

  1. Heat the oven to 350°F and grease a 2 1/2-quart baking dish.
  2. Whisk the condensed soup, sour cream, lemon juice, poppy seeds, garlic powder and black pepper.
  3. Fold in the cooked chicken and spread the mixture evenly in the dish.
  4. Toss the crushed crackers with the melted butter and scatter them over the chicken.
  5. Bake uncovered until the sauce bubbles around the edges and the crackers brown, 25 to 30 minutes.
  6. Rest the casserole for 5 minutes before serving.
