Poppy Seed Chicken Casserole

The cracker lid is the point of poppy seed chicken. Crush it coarsely and leave some craggy pieces. Fine crumbs soak up butter and go flat. Underneath, the chicken should stay in distinct pieces rather than disappearing into sauce.

Ingredients
  

  • 4 cups cubed cooked chicken
  • 2 cans 10 1/2 oz each condensed cream of chicken soup
  • 1 cup sour cream
  • 1 tbsp lemon juice
  • 1 tbsp poppy seeds
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 2 cups coarsely crushed buttery round crackers
  • 6 tbsp unsalted butter melted

Method
 

  1. Heat the oven to 350°F and butter a 3-quart baking dish with 1 teaspoon of the melted butter.
  2. Stir the chicken, soup, sour cream, lemon juice, poppy seeds, garlic powder and pepper together in a large bowl.
  3. Spread the chicken mixture evenly in the prepared dish.
  4. Toss the cracker crumbs with the remaining melted butter until every piece is lightly coated.
  5. Scatter the crackers over the filling without pressing them down.
  6. Bake for 30 to 35 minutes, until the edges bubble, the top is browned and the center reaches 165°F, then rest for 5 minutes.
