Popeyes-Inspired Homestyle Baked Mac

A custardy cheddar center and browned shredded-cheese top distinguish this Popeyes-inspired homestyle pan from flour-thickened stovetop mac. Eggs and evaporated milk set around tender elbows without turning into scrambled pieces. Let the bake rest so the rich center settles before the first spoonful.

Ingredients
  

  • 1 lb elbow macaroni
  • 3 cups shredded sharp cheddar divided
  • 2 cups shredded Colby Jack divided
  • 2 large eggs
  • 1 can 12 oz evaporated milk
  • 1 1/2 cups whole milk
  • 4 tbsp unsalted butter melted
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Method
 

  1. Heat the oven to 350°F and boil macaroni 2 minutes short of tender; drain.
  2. Whisk eggs, evaporated milk, whole milk, melted butter, salt and pepper.
  3. Combine macaroni with 2 cups cheddar and 1 cup Colby Jack in a buttered 9-by-13-inch dish.
  4. Pour the milk mixture evenly over the pasta and top with remaining cheeses.
  5. Bake for 32 to 38 minutes until browned at the edges and just set in the center; rest 15 minutes.
