Pineapple-Glazed Ham Steak

Ham and pineapple were paired everywhere in the postwar years because sweet acid cuts salty meat. The idea is sound; the tower of canned rings and fluorescent cherries is optional history. A skillet glaze keeps this version on the right side of retro.

Ingredients
  

  • 1 fully cooked bone-in ham steak 1 1/2 lbs
  • 1 tbsp unsalted butter
  • 4 canned pineapple rings in juice
  • 1/2 cup reserved pineapple juice
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • 1 tsp apple cider vinegar
  • 1/8 tsp ground cloves

Method
 

  1. Pat the ham steak and pineapple rings dry so they brown instead of steaming.
  2. Melt the butter in a large skillet over medium-high heat and sear the ham for 3 minutes per side; transfer it to a plate.
  3. Brown the pineapple rings in the same skillet for 2 minutes per side and move them beside the ham.
  4. Add the pineapple juice, brown sugar, mustard, vinegar and cloves and simmer for 4 minutes until syrupy.
  5. Return the ham and pineapple, spoon the glaze over both and cook for 3 minutes until the ham reaches 140°F.
