Pineapple Coconut Dump Cake

Undrained crushed pineapple provides all the fruit liquid this sunny four-ingredient cake needs. Sweetened coconut toasts across the yellow-cake topping and catches butter at the edges. Spread the pineapple completely into the corners before adding dry mix; shallow spots are where powdery patches tend to survive.

Ingredients
  

  • 2 cans 20 oz each crushed pineapple in juice, undrained
  • 1 box 15.25 oz yellow cake mix
  • 1 1/2 cups sweetened shredded coconut
  • 12 tbsp unsalted butter melted

Method
 

  1. Heat the oven to 350°F and spread the pineapple with all its juice in a 9-by-13-inch dish.
  2. Cover the fruit with an even layer of dry cake mix.
  3. Scatter coconut over the mix and drizzle melted butter slowly across the full surface.
  4. Bake for 45 to 50 minutes until the coconut is toasted, the crust is browned and pineapple bubbles at the edges.
  5. Rest 25 minutes before serving.
