Heat the oven to 350°F and butter a 2-quart baking dish with 1 teaspoon of the melted butter.
Whisk the eggs, milk, salt and pepper until no streaks of egg white remain.
Stir in the corn, pimientos, cheddar, 3/4 cup cracker crumbs and 2 tablespoons melted butter.
Pour the mixture into the dish and combine the remaining 1/4 cup crumbs with the remaining melted butter.
Scatter the buttered crumbs over the top and bake for 35 to 40 minutes, until browned and 160°F at the center.
Rest for 10 minutes so the custard firms enough to spoon neatly.
