Pimento Cheese Patty Melt

Pimento cheese gives a Southern melt both cheddar flavor and spreadable coverage, while a thin beef patty keeps it from becoming grilled cheese with an afterthought. Use a thick homemade-style spread and a modest layer. Too much escapes into the skillet before the bread can brown.

Ingredients
  

  • 12 oz 80% lean ground beef
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 4 slices sourdough bread
  • 1 cup thick pimento cheese
  • 1/3 cup drained pickled onions
  • 2 tbsp unsalted butter

Method
 

  1. Shape the beef into two broad thin patties and season with salt and pepper.
  2. Cook in a cast-iron skillet over medium-high heat for 2 to 3 minutes per side until browned and 160°F inside.
  3. Spread pimento cheese over the inner face of every bread slice.
  4. Add a patty and a thin layer of drained pickled onions to each sandwich and butter the outside faces.
  5. Griddle over medium-low heat for 3 to 4 minutes per side until the bread is crisp and pimento cheese is hot.
