Pepper Jack Fried Egg Bagel

A runny yolk is lovely on a plate and mostly annoying inside a bagel. Fry these eggs over-medium so the yolks are jammy but not liquid. Pepper Jack and a swipe of scallion cream cheese make the sturdy bagel feel intentional instead of just heavy.

Ingredients
  

  • 4 plain bagels split
  • 1/3 cup scallion cream cheese
  • 1 tbsp unsalted butter
  • 4 large eggs
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 4 slices Pepper Jack cheese

Method
 

  1. Toast the bagels until the cut surfaces are crisp but the centers still bend.
  2. Spread 1 tablespoon scallion cream cheese over each bottom half.
  3. Melt the butter in a nonstick skillet over medium heat and crack in the eggs with space between them.
  4. Season with salt and black pepper, cook for 2 minutes, flip and cook for 1 to 2 minutes until the whites are firm and the centers reach 160°F.
  5. Place one Pepper Jack slice over each egg and cover for 30 seconds.
  6. Set the eggs on the bagels and close the sandwiches gently so the yolks stay centered.
