Pepper-Crusted BLT

The BLT is a tomato sandwich with bacon support, so don't waste your best tomatoes under wet lettuce. Salt and drain the slices while the bacon cooks. A little cracked pepper in the mayonnaise makes the familiar version taste deliberate without changing its identity.

Ingredients
  

  • 8 slices country white bread
  • 12 slices thick-cut bacon
  • 2 large ripe tomatoes cut into 12 slices
  • 8 leaves butter lettuce washed and dried
  • 1/2 cup mayonnaise
  • 1 tsp coarse black pepper
  • 1/2 tsp kosher salt

Method
 

  1. Heat the oven to 400°F and arrange the bacon in a single layer on a foil-lined sheet pan.
  2. Bake for 16 to 20 minutes until crisp, then drain the bacon on a rack.
  3. Season the tomato slices with the salt and let them drain on paper towels for 10 minutes.
  4. Toast the bread and stir the coarse black pepper into the mayonnaise.
  5. Spread all 8 toast slices with pepper mayonnaise and layer 4 with lettuce, 3 tomato slices and 3 bacon slices each.
  6. Close the sandwiches, cut each in half and serve before the toast softens.
