Pear Pecan Crisp

Fresh pears turn buttery-soft while pecans toast in the oat topping. Choose firm-ripe fruit so the slices remain visible after baking, and keep the nuts fairly coarse for contrast. A pinch of cardamom brings warmth without making the pan taste like a heavily spiced apple dessert.

Ingredients
  

  • 8 cups peeled 1/2-inch fresh pear slices
  • 1/2 cup granulated sugar
  • 3 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/4 tsp ground cardamom
  • 1/4 tsp kosher salt
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 2/3 cup packed light brown sugar
  • 3/4 cup chopped pecans
  • 1/2 tsp kosher salt
  • 8 tbsp unsalted butter melted

Method
 

  1. Heat the oven to 375°F and butter a 9-by-13-inch baking dish.
  2. Toss the pears with granulated sugar, cornstarch, lemon juice, cardamom and 1/4 teaspoon salt.
  3. Spread the fruit in the dish.
  4. Stir the oats, flour, brown sugar, pecans and 1/2 teaspoon salt, then mix in the melted butter.
  5. Break the topping into uneven clumps over the pears.
  6. Bake for 42 to 46 minutes until the pears bubble at the center and the pecans are fragrant; cool 25 minutes.
