Peanut Butter Oatmeal Cookies

Keep a bag of these cookies where you can reach it without unpacking a stack of dinner containers. Peanut butter and ordinary rolled oats make a sturdy cookie that holds together after thawing, while a modest amount of chocolate gives it a familiar bakery-counter finish without frosting or filling to smear on your fingers. They're a snack to have alongside whatever else you're eating, with no special claims attached to the ingredients.

Ingredients
  

  • 1 1/2 cups old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp fine salt
  • 4 tbsp unsalted butter softened
  • 1/2 cup smooth peanut butter
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup semisweet chocolate chips

Method
 

  1. Heat oven to 350°F and line two baking sheets with parchment. Whisk oats, flour, baking soda and salt in a bowl.
  2. Beat butter, peanut butter and both sugars until creamy, about 2 minutes. Beat in egg and vanilla, then mix in the dry ingredients just until combined and fold in chocolate chips.
  3. Divide into 24 equal mounds, about 1 1/2 tablespoons each, spacing twelve on each sheet. Flatten gently to about 1/2 inch thick.
  4. Bake one sheet at a time for 10 to 12 minutes until the edges are set and lightly browned; leave on the sheet for 5 minutes before moving to a rack.
  5. Cool completely, freeze in a single layer until firm, then pack in a freezer container with parchment between layers. Freeze for up to 2 months for best quality.
  6. Thaw a cookie at room temperature for 20 to 30 minutes, or microwave one on a microwave-safe plate for 10 to 15 seconds for a softer center. Let the chocolate cool slightly before eating.
