Peanut Butter Bacon Banana Waffle Sandwich

Not every breakfast sandwich needs an egg. Crisp waffles, salty bacon, peanut butter and banana hit the sweet-salty counter-breakfast lane without syrup running everywhere. Use a firm banana so the slices stay put when the sandwich is pressed.

Ingredients
  

  • 8 frozen round waffles
  • 8 slices bacon
  • 1/2 cup creamy peanut butter
  • 2 firm bananas thinly sliced
  • 1 tsp ground cinnamon

Method
 

  1. Cook the bacon in a skillet over medium heat for 8 to 10 minutes until crisp and at least 145°F, then rest it on a rack for 3 minutes.
  2. Toast the waffles until their outside ridges are crisp.
  3. Spread 1 tablespoon peanut butter over one side of each waffle.
  4. Arrange half a sliced banana over four waffles and dust each with cinnamon.
  5. Add two bacon slices to each and close with the remaining waffles.
  6. Press the sandwiches in a dry skillet for 1 minute per side until warm but not flattened.
