Peach Raspberry Cobbler Dump

Peaches bring syrup, raspberries bring tartness and biscuit mix turns both into a cobbler without cooked filling. Stir only the fruit layer; once the dry topping lands, leave it alone. The finished top is craggy rather than smooth, with berry juice bubbling through the cracks.

Ingredients
  

  • 2 cans 15 oz each sliced peaches in juice, drained
  • 2 cups frozen raspberries
  • 1/3 cup granulated sugar
  • 1 tbsp cornstarch
  • 2 cups baking mix
  • 1/2 cup whole milk
  • 8 tbsp unsalted butter melted

Method
 

  1. Heat the oven to 375°F and coat a 9-by-13-inch baking dish with cooking spray.
  2. Stir the peaches, frozen raspberries, sugar and cornstarch together directly in the dish and spread the fruit level.
  3. Sprinkle the baking mix evenly over the fruit without stirring it in.
  4. Drizzle the milk and melted butter slowly over the dry mix, covering as much of the surface as possible.
  5. Bake uncovered for 42 to 48 minutes, until the topping is golden and thick fruit bubbles through the center, not just the edge.
  6. Cool for 20 minutes before serving so the juices stop running.
