Pastrami on Rye

Hot pastrami on rye needs mustard and little else. Steaming the thin slices briefly loosens their fat and restores the supple deli-counter texture without drying the edges. Pile the meat in folded ribbons rather than a compressed brick, then cut across the grain already established by the slicer.

Ingredients
  

  • 12 oz very thinly sliced pastrami
  • 2 tbsp water
  • 4 slices seeded rye bread
  • 3 tbsp spicy brown mustard
  • 2 large dill pickle spears

Method
 

  1. Put the pastrami and water in a covered skillet over low heat for 3 to 4 minutes until steaming and supple.
  2. Warm the rye lightly in a toaster without making it hard.
  3. Spread mustard over one face of every bread slice.
  4. Fold the hot pastrami loosely over two slices and close the sandwiches.
  5. Cut in half and serve with pickle spears.
