Heat the oven to 375°F and add the red lentils, crushed tomatoes and vegetable broth to a 9-by-13-inch baking dish.
Stir in the spinach, salt and black pepper and press the leaves below the liquid.
Cover tightly with foil and bake for 35 to 40 minutes, until the lentils are soft and the sauce is thick.
Stir the lentils, make 8 deep wells across the surface and crack one egg into each well.
Bake uncovered for 10 to 15 minutes more, until the whites are opaque and the eggs reach 160°F.
Rest the dish for 5 minutes before spooning out each egg with the lentils underneath.
