Oklahoma Onion Burger

Paper-thin onions are smashed into the beef, not cooked in a separate pile. They steam sweet against the patty, then brown when the whole thing flips. Use more onion than seems reasonable; that is the point of this Oklahoma original.

Ingredients
  

  • 1 large yellow onion sliced paper-thin
  • 1 tsp kosher salt divided
  • 1 1/4 lbs 80/20 ground beef divided into 4 loose balls
  • 1/2 tsp coarse black pepper
  • 4 slices American cheese
  • 4 soft hamburger buns
  • 1 tbsp unsalted butter
  • 12 dill pickle chips
  • 4 tsp yellow mustard

Method
 

  1. Toss the sliced onion with 1/2 teaspoon salt, rest it for 10 minutes and squeeze it firmly in a clean towel until no longer wet.
  2. Heat a large steel griddle or cast-iron skillet over high heat and toast the buttered buns for 1 minute; move them to plates.
  3. Set the cold beef balls on the hot surface and immediately mound one-quarter of the onions over each one.
  4. Press each onion-topped ball firmly through parchment to 1/4 inch thick so the strands embed in the meat, then season with the remaining salt and pepper.
  5. Cook untouched for 2 minutes until the beef edges brown; do not press the patties a second time.
  6. Scrape under the patties, flip them onion-side down and cook for 2 to 3 minutes until the onions brown and the beef reaches 160°F.
  7. Top each patty with American cheese for the final 30 seconds, then transfer to a bun with mustard and 3 pickle chips.
