Noodles and Company-Inspired Wisconsin Mac

This Wisconsin-inspired bowl keeps its cheddar sauce underneath and adds a fresh shredded-cheddar cap at serving, the visual distinction from fully mixed restaurant mac. Elbows stay firm enough to mound. American cheese gives the base silk, while sharp cheddar on top softens only where it meets the heat.

Ingredients
  

  • 12 oz elbow macaroni
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 1 can 12 oz evaporated milk
  • 1 cup whole milk
  • 6 oz American cheese chopped
  • 10 oz sharp cheddar freshly shredded and divided
  • 1 tsp kosher salt
  • 1/4 tsp black pepper

Method
 

  1. Boil the macaroni until just tender, reserve 1 cup pasta water and drain.
  2. Melt butter over medium-low heat, whisk in flour for 1 minute and gradually whisk in both milks.
  3. Simmer for 3 minutes, remove from heat and melt in American cheese and 6 ounces cheddar.
  4. Season with salt and pepper and fold in macaroni, loosening with pasta water.
  5. Divide into warm bowls and top each with the remaining freshly shredded cheddar without stirring it in.
