No-Bean Steakhouse Chili

This bowl is beef-forward, thick and built for people who do not want beans interrupting the texture. Toast the spices in the rendered fat before adding tomato. The chili is done when a spoon dragged across the pot leaves a trail for a second.

Ingredients
  

  • 2 lbs 85/15 ground beef
  • 1 large yellow onion diced
  • 3 garlic cloves minced
  • 3 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp tomato paste
  • 1 can crushed tomatoes 28 oz
  • 1 1/2 cups low-sodium beef broth
  • 1 tbsp Worcestershire sauce

Method
 

  1. Brown the ground beef in a Dutch oven over medium-high heat for 8 to 10 minutes, breaking it into small crumbles, until no pink remains and it reaches 160°F.
  2. Spoon off all but 2 tablespoons fat, add the onion and cook for 6 minutes until soft and lightly browned.
  3. Stir in the garlic, chili powder, cumin, paprika, salt and pepper and cook for 1 minute until fragrant.
  4. Add the tomato paste and cook for 2 minutes until it darkens and begins sticking to the pot.
  5. Pour in the crushed tomatoes, broth and Worcestershire sauce, scraping up the browned bits.
  6. Simmer uncovered over medium-low heat for 35 to 40 minutes, stirring occasionally, until thick enough to hold a spoon trail.
  7. Rest the chili off the heat for 10 minutes before ladling it into bowls.
