New Jersey Pork Roll Egg and Cheese Melt

Pork roll, egg and American cheese make the New Jersey griddle sandwich, here pressed between crisp white bread instead of a round roll. Score the meat slices so they stay flat in the skillet. Ketchup is optional but traditional enough to be offered at the table.

Ingredients
  

  • 8 slices pork roll
  • 4 large eggs
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 4 slices white sandwich bread
  • 4 slices American cheese
  • 2 tbsp unsalted butter
  • 2 tbsp ketchup optional

Method
 

  1. Cut three small notches around each pork-roll slice and griddle over medium heat for 2 minutes per side until browned.
  2. Whisk the eggs with salt and pepper and cook as two thin folded rectangles.
  3. Layer American cheese, pork roll, egg and more cheese between bread slices.
  4. Butter the outside faces and griddle over medium-low heat for 3 minutes per side until crisp and melted.
  5. Serve with ketchup if desired.
