Nacho Fries with Cheese Sauce

The fries need a dry seasoning that sticks without turning muddy. Toss them straight from the oven while their surface oil is hot, then serve the cheese sauce beside them. Pouring sauce over the whole pile guarantees soft fries.

Ingredients
  

  • 2 lbs frozen straight-cut french fries
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1 1/2 cups warm nacho cheese sauce

Method
 

  1. Bake the fries at 425°F for 25 to 30 minutes, turning once, until deeply crisp and at least 165°F.
  2. Mix the chili powder, smoked paprika, salt, onion powder, garlic powder and cayenne.
  3. Transfer the hot fries to a large bowl immediately.
  4. Sprinkle the seasoning over the fries and toss until evenly coated.
  5. Return the fries to the sheet pan for 2 minutes to set the seasoning.
  6. Serve with warm nacho cheese in a separate bowl.
