Mushroom Swiss Egg Croissant

Mushrooms give a meatless breakfast sandwich enough browned, savory weight. Cook them until the skillet is dry before adding the folded egg. Swiss echoes the mushrooms without overwhelming the croissant's butter.

Ingredients
  

  • 8 oz cremini mushrooms thinly sliced
  • 1 tbsp olive oil
  • 1 tsp kosher salt divided
  • 6 large eggs
  • 1/4 tsp ground black pepper
  • 1 tbsp unsalted butter
  • 4 slices Swiss cheese
  • 4 large croissants split

Method
 

  1. Heat the olive oil in a skillet over medium-high heat and cook the mushrooms with 1/4 teaspoon salt for 7 minutes until browned and dry.
  2. Transfer the mushrooms to a plate and whisk the eggs with the remaining salt and black pepper.
  3. Melt the butter in a nonstick skillet and cook the eggs as one thin sheet until they reach 160°F.
  4. Fold the egg sheet into a rectangle and cut it into four portions.
  5. Fill each croissant with mushrooms, folded egg and one Swiss slice.
  6. Warm the sandwiches in a 300°F oven for 2 minutes until the cheese softens.
