Monte Cristo Griddle Sandwich

Ham, turkey and Swiss sit inside bread dipped lightly in egg custard, producing a savory sandwich with French-toast edges. The dip must be quick; saturated bread stays wet at the center. A small confectioners' sugar dust is traditional, while jam belongs beside the sandwich rather than inside the skillet.

Ingredients
  

  • 4 slices sturdy white bread
  • 4 oz thinly sliced deli ham
  • 4 oz thinly sliced roasted turkey
  • 4 slices Swiss cheese
  • 2 large eggs
  • 1/3 cup whole milk
  • 1/4 tsp kosher salt
  • 2 tbsp unsalted butter
  • 1 tbsp confectioners' sugar
  • 1/3 cup raspberry jam

Method
 

  1. Build two sandwiches with ham, turkey and Swiss between the bread.
  2. Whisk the eggs, milk and salt in a shallow dish.
  3. Melt butter in a cast-iron skillet over medium-low heat and dip each sandwich quickly on both sides in the egg mixture.
  4. Griddle for 4 to 5 minutes per side until golden, the cheese melts and the egg coating is fully set.
  5. Dust lightly with confectioners' sugar and serve with jam alongside.
