Millionaire Pie

Millionaire pie is a cold, unapologetically mid-century mix of pineapple, coconut, pecans and cream. Drain the pineapple until it stops dripping or the filling never firms up. It should cut as a soft frozen-looking wedge, not stand like cheesecake.

Ingredients
  

  • 1 1/2 cups graham cracker crumbs
  • 6 tbsp unsalted butter melted
  • 1/4 cup granulated sugar
  • 8 oz cream cheese softened
  • 14 oz sweetened condensed milk
  • 20 oz canned crushed pineapple drained very well
  • 1 cup sweetened shredded coconut
  • 1/2 cup chopped pecans
  • 2 cups heavy cream
  • 2 tbsp fresh lemon juice

Method
 

  1. Mix the graham crumbs, melted butter and granulated sugar and press them into a 9-inch pie plate.
  2. Refrigerate the crust for 20 minutes while beating the cream cheese and condensed milk until smooth.
  3. Fold in the well-drained pineapple, coconut, pecans and lemon juice.
  4. Beat the heavy cream to medium peaks and fold it into the pineapple mixture in 3 additions.
  5. Spread the filling into the crust and refrigerate for at least 8 hours before cutting.
