Mexican Pizza-Style Stacks

Two crisp flour tortillas create the pizza structure: beans and beef in the middle, red sauce and cheese on top. Fry or toast the tortillas until rigid before assembly. If they still bend, the finished stack will eat like a wet quesadilla.

Ingredients
  

  • 8 small flour tortillas
  • 1/4 cup neutral oil
  • 1 1/2 cups warm refried beans
  • 1 1/2 cups prepared seasoned beef base
  • 1 cup mild red taco sauce
  • 1 1/2 cups shredded Mexican cheese blend
  • 1 medium tomato finely diced

Method
 

  1. Heat the oil in a skillet and fry the tortillas for 1 to 2 minutes per side until flat and crisp.
  2. Drain the tortillas on a rack and heat the beans and beef to 165°F.
  3. Spread beans and beef over four tortillas and top with the remaining tortillas.
  4. Spread red sauce over the top tortillas and add the cheese blend.
  5. Bake at 400°F for 5 to 7 minutes until the cheese melts.
  6. Add diced tomato and cut each stack into four wedges.
