McDonald's-Style Egg and Sausage Muffin

A jar ring gives the egg its tidy shape, but the sandwich works without one. Flatten the sausage wider than the muffin because it shrinks as it cooks, then wrap the finished sandwich for two minutes if you want that familiar soft, unified texture.

Ingredients
  

  • 12 oz breakfast sausage
  • 4 large eggs
  • 1 tsp neutral oil
  • 4 English muffins split
  • 4 slices American cheese
  • 1 tbsp softened butter

Method
 

  1. Divide the sausage into 4 thin patties slightly wider than the muffins.
  2. Cook the patties in a skillet over medium heat for 4 minutes per side until browned and 160°F inside.
  3. Oil 4 metal jar rings in a clean skillet, crack 1 egg into each, add 1 tablespoon water outside the rings, and cover for 3 to 4 minutes until the whites set.
  4. Toast the muffin halves and spread them lightly with the butter.
  5. Layer each bottom muffin with cheese, sausage and egg, close the sandwich, and wrap it in parchment for 2 minutes before serving.
