Marie Callender's-Inspired Vermont White Cheddar Mac

Vermont-style sharp white cheddar and cavatappi distinguish this Marie Callender's-inspired frozen bowl. A small amount of cream gives the sauce richness without a baked crust. The pale sauce should coat every spiral evenly, with white pepper and dry mustard adding background sharpness rather than visible seasoning.

Ingredients
  

  • 12 oz cavatappi
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 12 oz extra-sharp white cheddar shredded
  • 1 tsp dry mustard
  • 1 tsp kosher salt
  • 1/4 tsp white pepper

Method
 

  1. Boil cavatappi until just tender, reserve 1 cup pasta water and drain.
  2. Melt butter over medium-low heat, whisk in flour for 1 minute and gradually add milk and cream.
  3. Simmer gently for 3 minutes, then remove from heat.
  4. Melt in white cheddar a handful at a time and season with dry mustard, salt and white pepper.
  5. Fold in cavatappi and loosen with reserved pasta water until creamy.
