Loco Moco

Rice, a beef patty, brown gravy and a fried egg make a substantial dinner without a long ingredient list. Keep the patties thin and cook the rice at the same time as the meat; the gravy uses the browned skillet, and a small second pan handles the eggs while it simmers.

Ingredients
  

  • 1 cup white long-grain rice rinsed
  • 1 1/2 cups water
  • 1 lb 85% lean ground beef
  • 3/4 tsp kosher salt divided
  • 1/2 tsp black pepper
  • 1 small onion thinly sliced
  • 1 tbsp unsalted butter
  • 1 tbsp all-purpose flour
  • 1 1/2 cups low-sodium beef broth
  • 1 tbsp low-sodium soy sauce
  • 1 tsp Worcestershire sauce
  • 1 tsp neutral oil
  • 4 large eggs

Method
 

  1. Bring the rice and water to a boil in a saucepan, cover and cook on low for 15 minutes, then rest off the heat for 5 minutes.
  2. Shape the beef into four patties about 1/2 inch thick. Season with 1/2 teaspoon salt and the pepper; sear in a large skillet over medium-high heat for 4 minutes per side, until the centers reach 160°F, then transfer to a plate.
  3. Leave 1 tablespoon drippings in the skillet. Add the onion and butter and cook for 3 minutes, then stir in flour for 30 seconds. Slowly stir in broth, soy sauce and Worcestershire; simmer for 3 minutes until lightly thickened.
  4. Meanwhile, heat the oil in a second skillet, add the eggs and remaining salt, cover and cook over medium-low heat until whites and yolks are set.
  5. Divide the rice among plates, add a patty to each and spoon the onion gravy over it. Top with the cooked eggs and serve.
