Lime Pear Cottage Cheese Gelatin Salad

Yes, this one is green, wobbly and proudly sweet-salty. Drain the pears hard. Wait until the gelatin thickens before folding in the cottage cheese. Rush that point and every solid piece sinks.

Ingredients
  

  • 1 package 6 oz lime-flavored gelatin
  • 2 cups boiling water
  • 1 can 15 oz pear halves in juice
  • 1 cup reserved pear juice and cold water combined
  • 2 cups small-curd cottage cheese
  • 1/2 cup mayonnaise
  • 1/2 cup chopped pecans

Method
 

  1. Drain the pears, reserve their juice and add enough cold water to the juice to measure 1 cup total.
  2. Chop the drained pears into 1/2-inch pieces and pat them dry.
  3. Dissolve the gelatin completely in the boiling water, stirring for about 2 minutes.
  4. Stir in the 1 cup cold pear-juice mixture and refrigerate for 45 to 60 minutes, until syrupy but not set.
  5. Whisk the cottage cheese and mayonnaise together, then fold them into the thickened gelatin with the pears and pecans.
  6. Pour the mixture into a 2-quart serving dish and refrigerate for at least 4 hours, until firmly set.
