Season the cutlets with salt and pepper and let them stand for 10 minutes.
Set the flour in one shallow dish, whisk the eggs with milk in another and spread the breadcrumbs in a third.
Coat each cutlet in flour, egg and breadcrumbs, pressing just enough to cover without packing the crumbs thickly.
Heat 1/4 inch olive oil in a broad skillet to 350°F.
Fry two cutlets at a time for 2 to 3 minutes per side until evenly golden and 165°F at the thickest point.
Drain on a wire rack and return the oil to 350°F before frying the remaining cutlets.
Rest for 2 minutes and serve with lemon wedges on the side.
