Jersey Mike's-Style Turkey Oil-and-Vinegar Sub

The dressing goes on the vegetables, not straight into the bread, which buys you time before sogginess. Shaved onion and dried oregano give a simple turkey sandwich its deli-counter bite. Build it shortly before eating.

Ingredients
  

  • 4 six-inch sub rolls
  • 1 lb thinly sliced roasted turkey
  • 8 slices provolone cheese
  • 2 cups shredded iceberg lettuce
  • 1 cup thinly sliced tomato
  • 1/2 cup very thinly sliced red onion
  • 3 tbsp red wine vinegar
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp kosher salt

Method
 

  1. Split the rolls lengthwise without cutting through the back hinge.
  2. Layer each roll with equal portions of turkey and provolone.
  3. Toss the lettuce, tomato and onion gently with the vinegar, oil, oregano and salt.
  4. Lift the dressed vegetables out of the bowl with tongs and divide them across the sandwiches without pouring in pooled dressing.
  5. Close the subs, press them lightly, and cut each one in half with a serrated knife.
