Jerk Chicken Mango Slaw Sandwiches

Jerk seasoning needs fruit and acid, but that doesn't mean a sugary bottled glaze. Allspice, thyme and cayenne season the grilled thighs. Mango and lime sharpen the cabbage slaw. Chop it finely enough to stay inside the bun. The chicken should remain the loudest thing in it.

Ingredients
  

  • 4 boneless skinless chicken thighs about 1 1/2 lbs, trimmed
  • 1 tbsp vegetable oil
  • 2 tsp ground allspice
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1/2 tsp cayenne pepper
  • 1 tsp kosher salt
  • 2 cups finely shredded red cabbage
  • 1 ripe mango cut into 1/4-inch dice
  • 2 tbsp lime juice
  • 1/3 cup mayonnaise
  • 4 brioche buns split

Method
 

  1. Rub the chicken with vegetable oil, allspice, thyme, garlic powder, cayenne and salt and refrigerate for 30 minutes to 4 hours.
  2. Toss the cabbage and mango with lime juice and mayonnaise and refrigerate the slaw.
  3. Heat a grill or grill pan to medium-high and cook the chicken for 5 to 7 minutes per side, until dark at the edges and 165°F inside.
  4. Rest the thighs for 5 minutes while toasting the buns cut-side down for 1 minute.
  5. Stir the slaw once more and drain off any liquid collected in the bottom of the bowl.
  6. Place 1 grilled thigh on each bun and top with 3/4 cup mango-cabbage slaw.
