Jalapeño Popper Grilled Cheese

Cream cheese, cheddar and pickled jalapeños put popper flavor between crisp sourdough without requiring a fryer. The cream cheese must be softened and spread thinly so it heats through. Drained peppers and crisp bacon pieces add bite without leaking brine or pulling out in long strips.

Ingredients
  

  • 4 slices sourdough bread
  • 4 oz cream cheese softened
  • 4 slices sharp cheddar
  • 1/3 cup drained chopped pickled jalapeños
  • 4 strips bacon cooked crisp and chopped
  • 2 tbsp unsalted butter

Method
 

  1. Spread a thin layer of cream cheese over one side of every bread slice.
  2. Top two slices with cheddar, drained jalapeños and chopped bacon and close the sandwiches.
  3. Spread butter over the outside faces.
  4. Griddle over medium-low heat for 3 to 4 minutes per side until the bread is crisp and cheese melts.
  5. Rest 2 minutes before cutting so the cream cheese does not run.
