Jalapeño Popper Dip

Cream cheese, cheddar and chopped jalapeños deliver the popper flavor without asking anyone to manage hot stuffed peppers on a couch. Fresh peppers give a green bite and pickled peppers supply acidity. The crisp cracker topping is added at the table so it does not soften during a long warm hold.

Ingredients
  

  • 2 packages 8 oz each cream cheese, cubed
  • 1 cup sour cream
  • 2 cups shredded sharp cheddar divided
  • 1 cup shredded Monterey Jack
  • 2 fresh jalapeños seeded and finely chopped
  • 1/3 cup chopped pickled jalapeños
  • 1/2 tsp garlic powder
  • 1 cup crushed buttery crackers
  • 2 tbsp melted butter

Method
 

  1. Combine the cream cheese, sour cream, 1 1/2 cups cheddar, Monterey Jack, fresh and pickled jalapeños and garlic powder in a 3-quart slow cooker.
  2. Cover and cook on low for 1 1/2 to 2 hours, stirring after 1 hour, until smooth and hot.
  3. Add the remaining cheddar, cover and let it melt for 10 minutes.
  4. Mix the cracker crumbs with melted butter in a small bowl.
  5. Switch the dip to warm and scatter the crumbs over only the portion being served, replenishing them as needed.
