Jalapeño Cheddar-Stuffed Burger

Cheddar and pickled jalapeño hide inside this thick burger, where both stay hotter than the surface suggests. Seal the beef completely and probe the meat beside the filling. Loose seams make cheese puddles; careful crimps make dinner.

Ingredients
  

  • 1 3/4 lbs 80/20 ground beef
  • 1 1/2 tsp kosher salt
  • 1/2 tsp coarse black pepper
  • 4 oz sharp cheddar cut into 4 compact pieces
  • 1/4 cup drained chopped pickled jalapeños
  • 4 sesame hamburger buns
  • 1 tbsp unsalted butter
  • 1/4 cup mayonnaise
  • 4 leaves green-leaf lettuce
  • 4 slices tomato

Method
 

  1. Divide the beef into 8 portions and flatten each between parchment into a 5-inch round.
  2. Place one cheddar piece and 1 tablespoon jalapeños in the center of 4 rounds, leaving a 1-inch border.
  3. Cover with the remaining beef rounds, pinch every edge firmly and smooth the seams closed.
  4. Season the stuffed patties with salt and pepper and chill them for 10 minutes.
  5. Cook in a heavy skillet over medium heat for 5 to 6 minutes per side, turning once without pressing.
  6. Confirm the beef beside the cheese pocket reaches 160°F, then rest the patties for 3 minutes.
  7. Toast the buttered buns, spread with mayonnaise and assemble with lettuce, tomato and one stuffed patty.
