Italian Sausage and Pepper Bites

Browned Italian sausage coins, soft peppers and a restrained tomato glaze taste like a sausage sandwich stripped down for toothpicks. Use fully cooked sausage or brown raw links to a safe temperature before slicing. The slow cooker is for melding and holding here, not for trying to brown meat.

Ingredients
  

  • 2 1/2 lb fully cooked Italian sausage links
  • 1 tbsp olive oil
  • 2 bell peppers cut in 1-inch pieces
  • 1 medium yellow onion cut in 1-inch pieces
  • 2 cups thick marinara sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes
  • 1/2 cup finely grated Parmesan

Method
 

  1. Slice the sausage into 1-inch coins and brown the cut sides in olive oil in a large skillet.
  2. Transfer the sausage to a 5-quart slow cooker.
  3. Add the peppers and onion to the skillet and cook for 5 minutes, then transfer them to the cooker.
  4. Stir in the marinara, Italian seasoning and pepper flakes; cover and cook on low for 2 1/2 to 3 hours.
  5. Switch to warm, sprinkle with Parmesan and serve with toothpicks and small plates.
