In-N-Out-Style Onion Griddle Burger

Mustard cooks directly against the beef after the flip, making a sharp, browned layer rather than a separate condiment stripe. Thin patties and deeply cooked onions define this one, so have the buns ready before the meat hits the iron.

Ingredients
  

  • 1 1/2 lbs 80-percent lean ground beef
  • 1 large yellow onion finely diced
  • 1 tbsp neutral oil
  • 2 tbsp yellow mustard
  • 1 tsp kosher salt
  • 4 slices American cheese
  • 4 hamburger buns
  • 1/4 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp dill pickle relish

Method
 

  1. Cook the onion in the oil on a griddle over medium heat for 12 to 15 minutes until soft and deeply golden, then move it to a bowl.
  2. Mix the mayonnaise, ketchup and relish and spread the sauce on the cut buns.
  3. Divide the beef into 4 loose balls, place them on a hot griddle, smash to 1/3-inch thickness and season with salt.
  4. Cook for 2 minutes, spread mustard on the raw tops, then flip and cook until the beef reaches 160°F.
  5. Add cheese and onions, cover for 30 seconds until the cheese softens, and close each patty inside a prepared bun.
