Iced Caramel Cold Brew

Cold-brew concentrate supplies a round, low-acid base, and scratch caramel syrup adds cooked-sugar bitterness as well as sweetness. Diluting concentrate before adding milk prevents a harsh first sip. A narrow caramel ribbon inside the glass is enough; a heavy coating overwhelms coffee and makes the last inch syrupy.

Ingredients
  

  • 1/2 cup cold-brew concentrate
  • 1/4 cup cold water
  • 1 tbsp scratch caramel syrup from recipe 7 plus 1 tsp for the glass
  • 1 cup ice
  • 1/4 cup milk or half-and-half

Method
 

  1. Stir the cold-brew concentrate, water and 1 tablespoon caramel syrup together.
  2. Drizzle the remaining teaspoon caramel once around the inside of a tall glass.
  3. Fill the glass with ice and pour in the sweetened cold brew.
  4. Top with milk and stir just enough to marble the drink.
