Hatch Green Chile Grilled Cheese

Roasted green chile brings smoke, heat and enough moisture to challenge the bread. Drain and chop it well, then sandwich it between Monterey Jack and sturdy sourdough. A lid starts the melt; an uncovered finish puts the crunch back.

Ingredients
  

  • 8 slices sourdough bread
  • 12 oz Monterey Jack cheese shredded
  • 1 cup roasted peeled Hatch green chiles drained and chopped
  • 1/2 tsp ground cumin
  • 1/4 tsp kosher salt
  • 3 tbsp unsalted butter softened

Method
 

  1. Blot the chopped green chiles with paper towels, then stir them with the cumin and salt.
  2. Divide half the Monterey Jack over 4 bread slices and spread the chile mixture evenly over the cheese.
  3. Add the remaining cheese and close with the other bread slices.
  4. Butter the sandwich exteriors and place them in a skillet over medium-low heat.
  5. Cover and cook for 3 to 4 minutes per side, then uncover and cook each side for 1 minute more until crisp and fully melted.
  6. Rest the grilled cheese sandwiches for 1 minute before cutting diagonally.
