Grilled Smoky Barbecue Chicken

A dry paprika rub builds flavor first, and barbecue sauce goes on only in the final minutes. That timing keeps its sugar from scorching while raw chicken cooks. Use two thin coats rather than one heavy layer and pull each breast as soon as the thermometer reaches 165°F.

Ingredients
  

  • 4 boneless skinless chicken breasts 6 ounces each
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 3/4 cup barbecue sauce

Method
 

  1. Pound chicken to an even 3/4-inch thickness. Rub with oil, paprika, garlic powder, salt and pepper.
  2. Heat a grill to medium and oil the grates. Grill chicken 5 minutes on the first side.
  3. Turn, cook 3 minutes, brush with sauce, turn and brush the other side. Cook 1 to 3 minutes more.
  4. Remove each breast at 165°F, rest 5 minutes and serve with unused sauce.
