Grilled Peach Balsamic Chicken

Peach preserves and balsamic make a quick glaze that goes on after the chicken is mostly cooked. Fresh peach halves grill beside it for the final minutes and become the spoonable side. Holding back the sweet glaze prevents black sugar before the center is safe.

Ingredients
  

  • 4 boneless skinless chicken breasts 6 ounces each
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/3 cup peach preserves
  • 1/4 cup balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 4 firm peaches halved and pitted

Method
 

  1. Pound chicken to an even 3/4-inch thickness and rub with oil, salt and pepper. Whisk preserves, balsamic and Dijon.
  2. Heat a grill to medium and oil the grates. Grill chicken 5 minutes on the first side and 3 minutes on the second.
  3. Brush chicken with glaze and add peaches cut-side down. Cook 2 to 4 minutes more, turning and glazing chicken once.
  4. Remove chicken at 165°F and rest 5 minutes; serve with grilled peaches.
