Grilled Honey Lime Chicken

Lime, honey and cumin make a quick marinade, but the honey stays measured so the surface browns rather than burns. Pat off excess liquid before the chicken hits the grill. An even thickness and one turn preserve juices while the glaze develops light char.

Ingredients
  

  • 4 boneless skinless chicken breasts 6 ounces each
  • 1/4 cup fresh lime juice
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 2 garlic cloves minced
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Method
 

  1. Pound chicken to an even 3/4-inch thickness. Whisk lime juice, oil, honey, garlic, cumin, salt and pepper and marinate chicken 30 minutes to 4 hours.
  2. Heat a grill to medium-high and oil the grates. Let excess marinade drip from chicken.
  3. Grill 5 to 6 minutes per side, turning once.
  4. Remove at 165°F in the thickest part and rest 5 minutes.
