Grilled Cheese Burrito

The cheese crust belongs on the outside, which means the skillet heat has to stay moderate. Rice and tortilla strips give the filling two different textures, while a sour-cream stripe cools the seasoned beef. Let the outside cheese release before you flip.

Ingredients
  

  • 6 large flour tortillas
  • 2 cups prepared seasoned beef base
  • 2 cups cooked seasoned rice
  • 1 cup warm nacho cheese sauce
  • 1 cup crisp tortilla strips
  • 3/4 cup sour cream
  • 2 cups shredded cheddar cheese divided
  • 1 tbsp neutral oil

Method
 

  1. Warm the tortillas and reheat the beef and rice to 165°F.
  2. Divide the beef, rice, nacho cheese, tortilla strips, sour cream and 1 cup cheddar among the tortillas.
  3. Fold in the sides and roll tightly.
  4. Brush a skillet lightly with oil and scatter 2 tablespoons remaining cheddar in a burrito-size strip.
  5. Set one burrito seam-side down over the melting cheese and cook over medium-low heat for 2 minutes until the crust releases.
  6. Turn for 1 minute and repeat with the remaining burritos.
