Grasshopper Pie

Grasshopper pie is mint-chocolate filling in a chocolate-cookie crust, usually tinted a shade of green found nowhere in nature. The flavor combination holds up better than the color. Keep the mint measured and the pie is cool, clean and worth reviving once a year.

Ingredients
  

  • 24 chocolate wafer cookies finely crushed
  • 5 tbsp unsalted butter melted
  • 24 large marshmallows
  • 1/2 cup whole milk
  • 3 tbsp green creme de menthe
  • 1 tbsp white creme de cacao
  • 1 drop green food coloring
  • 1 1/2 cups heavy cream

Method
 

  1. Mix the cookie crumbs with the melted butter, press them into a 9-inch pie plate and bake at 350°F for 8 minutes; cool completely.
  2. Heat the marshmallows and milk in a saucepan over low heat, stirring until completely smooth, then cool to room temperature.
  3. Stir the creme de menthe, creme de cacao and food coloring into the marshmallow mixture.
  4. Whip the heavy cream to medium peaks and fold it into the mint mixture in 3 additions.
  5. Spread the filling in the cooled crust and freeze for at least 6 hours, then rest at room temperature for 10 minutes before slicing.
