Ginger Soy Beef Broccoli Rice Bake

Ginger, soy and pear make a savory glaze for beef, broccoli and rice without requiring a bottled stir-fry sauce. The broccoli is briefly blanched so its stems finish with the rice. Toasted sesame oil enters after the skillet leaves the heat, where its aroma survives the bake.

Ingredients
  

  • 4 cups small broccoli florets
  • 1 1/2 pounds 90% lean ground beef
  • 1 small onion diced
  • 2 tablespoons grated fresh ginger
  • 3 garlic cloves minced
  • 1/3 cup low-sodium soy sauce
  • 1 ripe pear peeled and grated
  • 2 tablespoons rice vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon toasted sesame oil
  • 4 cups cooked long-grain white rice
  • 2 large eggs beaten

Method
 

  1. Heat the oven to 375°F and grease a 9-by-13-inch dish. Blanch broccoli for 2 minutes, drain and dry.
  2. Brown beef and onion and drain. Add ginger and garlic for 30 seconds.
  3. Stir in soy sauce, pear, vinegar and brown sugar and simmer 4 minutes. Remove from heat and stir in sesame oil.
  4. Combine beef mixture, rice and broccoli, then stir in beaten eggs. Spread in the dish.
  5. Bake for 25 to 30 minutes until set and 165°F in the center. Rest 10 minutes.
