Frozen Mocha Pie

This pie lands between coffee ice cream and chocolate mousse, with enough cream cheese to keep the frozen slice from shattering. Dissolve the espresso before mixing or bitter granules show up in the filling. Give each slice ten minutes at room temperature before eating.

Ingredients
  

  • 1 1/2 cups chocolate cookie crumbs
  • 6 tbsp unsalted butter melted
  • 8 oz cream cheese softened
  • 14 oz sweetened condensed milk
  • 1/4 cup unsweetened cocoa powder
  • 2 tbsp instant espresso powder
  • 2 tbsp hot water
  • 2 cups heavy cream
  • 1 tsp vanilla extract
  • 1/4 tsp kosher salt
  • 1/2 cup mini semisweet chocolate chips

Method
 

  1. Mix the chocolate crumbs and melted butter and press them firmly into a 9-inch pie plate; freeze for 15 minutes.
  2. Beat the cream cheese, condensed milk and cocoa until smooth.
  3. Dissolve the espresso in the hot water and beat it into the cream-cheese mixture with the vanilla and salt.
  4. Beat the heavy cream to medium peaks and fold it into the mocha mixture, then fold in the mini chocolate chips.
  5. Spread the filling in the crust and freeze for at least 8 hours, then stand each slice at room temperature for 10 minutes before serving.
