Fried Bologna Egg and Cheese Roll

Cut slits in the bologna or it cups like a catcher’s mitt and cooks unevenly. The curled brown edges are the reason to make this at home instead of treating it like cold deli meat. Egg and American cheese turn it into a proper counter sandwich.

Ingredients
  

  • 8 thick slices bologna
  • 4 large eggs
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1 tsp unsalted butter
  • 4 slices American cheese
  • 4 kaiser rolls split

Method
 

  1. Cut four 1-inch slits around the edge of each bologna slice.
  2. Fry the bologna in a dry skillet over medium-high heat for 1 to 2 minutes per side until browned and curled at the edges.
  3. Transfer the bologna to a plate and melt the butter in the skillet.
  4. Fry the eggs over-medium, season with salt and black pepper, and cook until they reach 160°F.
  5. Place one American cheese slice over each egg and cover for 30 seconds.
  6. Fill each roll with two bologna slices and one cheesy egg.
